What is cardamom?

This spice comes from an aromatic herbaceous plant of the Zingiberaceae family such as ginger. It is a perennial rhizome plant, called cardamom, which produces fruits harvested at the end of maturity, but still green.
This plant grows in South America, and the harvest is from October to January. The seeds are harvested by hand, then dried before being put on sale.

Cardamom has a subtle and pleasant citrus scent, with a lemony and herbaceous flavor, with a taste of pine sap and eucalyptus, but very fresh. In terms of taste, which offers all its aromatic power, subtly minty and lemony.
Use of cardamom in cooking?

There is a trick to easily shell cardamom seeds: simply heat a pan over high heat, put the green seeds in the dry pan, stirring constantly until they burst and thus release black seeds.
To make them into powder, you can put the grains in a blender or in a coffee grinder or in a mortar with a pestle.
